Cold Pizza 6-4-12

Actually the pizza was hot, but the spouse has a cold and said only pizza sounded good.
Publix dough, rolled out thin. Done at 400, on parchment for 5 minutes, turned, another 5 minutes, turned, and pulled a few minutes later.
Sauce, garlic, turkey sausage, pepperoni, peppers, onions, mixed cheese.

How do you remove the parchment paper during the cook?
After about 5 minutes use the peel or a big spatula to raise the edge of the pie, and then just zip the paper out. Too early and it will be sticky. Lots of folks just leave it in. My real, or imagined impression was that added bitterness.
