Hi Eggheads
Going camping this weekend & the weather is going to be mixed so I'll have lots of time to spend with my egg. Friday's dinner is going to be 2 racks of babby back ribs, intend to do one rack dry the other wet. Would like a recipe and tips for slowly (max. 4 to 6 hrs.) smoking the ribs. Tips such as how much & how often to add wood shavings would be appreciated. Saturday's dinner is going to be a top sirloin oven roast. I would like to do a slow smoke for the roast as well. Again, any recipes and tips would be appreciated, also the family prefers the meat to be cooked medium.

tj, My ribs lately have been done indirect at 250 dome and no foiling, straight cook for aboout 5 hours for 3 racks, I remove the indirect setup and then grill ans sauce them. One tip is to remember to remove the skin/membrane from the back side of the rib bones.
