about to do my heaviest butt... just shy of 8lbs.. was going to have it ready to be thrown on somewhere around midnight thinking it would take about 14hrs plus... was going to go dome at 250 or so... here are my starting pics .... i have a bunch of rubs in the cabinet including some DIzzy's.... I have been liking this Lamberts of late though... This is also the longest cook I have attempted. I actually stacked the lump for the first time rather than dumping.. I had a couple of bags of cowboy i got from HD.. The bottom of this fire is stacked with huge huge pieces - i couldnt believe how big all the lump is in these small bags.. threw some apple chunks on top.. any suggestions?

Looks like you've got it under control! Have a wireless thermometer? I have a cheapie that I love for overnight cooks, just roll over in the night and see the temp of the Egg.

yes i have 2 maverick ET72's.. one for the butt and one for the grate.. i hope i get some sleep!
i am actually caibrating my dome thermometer and mavericks right now just to make sure i dont freak out later and think one is off!

You are going to be fine. Get some sleep and you will eat like a king tomorrow.
BTW- you have plenty of lump and big pieces in there for a great cook. I just found these huge (big as a football) pieces in my last bag and thought it was funnyKeepin' It Weird in The ATX FBTX -
i tell ya... after i built i was thinking that cant be enough lump cause it isnt high enough.. but after looking at those huge pieces i put in there - i figured i was over thinking it!

i just started it up and i am going to get it stabalized, throw it on and head to bed!

butt is on and is reading at 51 degrees.. dome temp is coming back to temp as well... hopefully all will run smooth tonight!

looks good, on the next butt you do try injecting it with some peach necter. It just adds to the flavor a bit.

update-
the egg pinged a grate temp of 225 basically all night... the butt is already reading 182 after 6 1/2hrs... does that sound right? think the stall will be right around here? didnt expect the temp of the butt to be this high so quickly..
i did get up about 3am to look at the temp and it was holding solid.
any thoughts?

Last one I did was put on at 11pm and I had to raise the temp to 300 to get it finished by 7pm. Took way longer then expected. I used an auber and held the temp at 225 overnight. Yours seems high to me for the amount of tme? Any chance the probe is not in the right place?In the bush just East of Cambridge,Ontario
