Salmon & Halibut

My favorite way to cook salmon is to use a quarter cup of brown sugar mised with salt, pepper and orange zest. Throw it on one side of the salmon as a rub. Sear in a cast iron skillet for a couple of minutes per side, then throw in the egg indirect at 350 for 6 minutes. Perfect every time.

Halibut doesn't need any dressing up. Just a little fire, some salt and some pepper.
