For the record, I could eat the cornbread and black beans by themselves. That is the first time I have bakes bread on the egg and it is by far the best thing I have had.Be careful, man! I've got a beverage here.

I'm ashamed to say, the cornbread is simply Jiffy Mix with creamed corn instead of milk. I have eaten Jiffy Mix cornbread all my life and I must say, Cooking it on the egg turns it into a totally different product. I cant even compare it to non-BGE cornbread. I will now try to find some home made bread to bake. @AZbge that is salt, pepper, and a little swamp venom from Dizzy Pig.Be careful, man! I've got a beverage here.

Here you go Travis. This is Aunt Carol's recipe for cornbread. The secret to good cornbread is using good quality stone ground cornmeal (I use Lamb's)
Aunt Carol's Cornbread
8 slices of good quality bacon (actually I double that for snacking)
3/4 C of good stone ground cornmeal - recommend Hodgson or any
good local mill3/4C of AP flour (King Arthur)
2 teaspoons of baking powder
1/4 C of sugar
1/2 teaspoon of salt
1 egg lightly beaten with a fork
3/4 C of sweet milk (buttermilk good substitute if using this
recipe for making cornbread dressing)1/4 C of Bacon grease (vegetable oil ok)
Cook bacon in CI skillet. Eat the bacon. Drain all ut 1/4 C of
the grease from CI skillet. Place CI skillet in a 425 degree oven on middle
rack.While grease getting hot, mix dry ingredients together. Add egg
and milk and stir till moist (batter will be thick). When grease is piping hot,
pour batter into the CI skillet. Batter should sizzle and immediately form a
crust. Lower temp to 400 and bake for for 20 to 25 minutes.Serve pipping hot with lots of butter...this is really good

Travis, this may be a total newb question, but I've never used CI without preheating the daylights out of it (meat, eggs, veggies).I'm guessing that didn't apply on your cornbread.Bx - > NJ ->TX!!!All to get cheaper brisket!

No pre heating at all and it still had a great crust. I will never make cornbread in the oven again.Be careful, man! I've got a beverage here.
