Breakfast Bacon Explosion
Wanted to try one of these for a while and thought it would make a good breakfast sandwich. It did. Varied from the traditional recipe and this is what I came up with.
Sprinkled Basic bbq rub (from bge cook book) on bacon weave. Spread bulk sausage over top. Single layer of sliced american cheese. Layer of caramelized onion (fried in bacon fat of coarse). Layer of crumbled fried bacon. Rolled it up and smoked it with apple chunks @ 220* till I hit 160*. Glazed one half with honey and the other half with maple syrup. Removed @ 165* and served with eggs over easy, on toasted and buttered pumpernickel rye swirl.
This was by far the best breakfast sammy I've ever laid taste buds on!
