I'm starting with ABT'S for apps. When they are done, a 6lb prime rib will be going on for a few hours. Baked potatoes will be going on for the last hour of the cook. I'll be roasting some veggies while the meat rests. Veggies will be asparagus, peppers, red onions, and garlic doused with EVOE and sprinkled with sea salt and cracked pepper. Prime rib was rubbed yesterday with Tasty Licks Red Eye Red Meat Rub.

Happy Easter! We are doing two 3lb beef tenderloins, and smoked Gouda twice baked potatoes on the eggs. The ham and beans will be done in a pot. Other veggies on the stove. Unfortunately two large eggs are not enough real estate for the crowd of eaters gathering at my house.

I have a 12 lb. shank ham in as we speak. Gave it some apple smoke and headed for 145* internal. YUM!!

@Gerhard If the ham was not don an EGG then the competition goes the other way it will be competing with the brisket!@Shawn We are both on the same page put my Butt on the EGG last night around 8 and I still got that last 10 degrees to go! Gonna get some potatoes from a local joint, green beans, and rolls.DavidBBQ since 2010 - Oh my, what I was missing.

Happy to report that this brisket was even better than the last one we made, it had great flavour, was tender and juicy. It was the hit of the dinner and there wasn't much in the way of left overs at the end of the meal. It came off the egg at about 1:00 and we put it in a warmed cooler to travel to the dinner, 5:00 p.m. and it was still nice and hot, when we unwrapped it even the smell that filled the kitchen was fantastic.Gerhard

Lookin good Gerhard. We also made roasted vegies, but I didn't take pics. The family and guests were all waiting patiently. They don't understand the need to take pictures of the food. My wife wouldn't let me bake the breast in the egg. Otherwise, the entire meal would have been egged.Mark Annville, PA
