Egret ham question???

I have followed the recipe to a tee, but when I place the ham on the Egg, do I place it flat side down on the grid??

Not sure about the egret recipe,but I would think flat side down in a pan, with liquid in the pan.

Flat side down on the grid with a drip pan to catch drippings........
