Went frig diving and found frozen corn, jalapeños, meat patty, two egg, bacon and CM pasta salad.  The dive evolved into this:

    Looks great. Did you break the handle off of the skillet to fit it in the egg?

    Those look so good....Haven't made corn bread yet on the Egg....Would putting the skillet on a pizza stone on top of the grate work?

    Chubbs, yes i did saw off the handle of the CI skillet.  I bought a new one espically to fit the small and off went the handle (I didn't have the heart to do that to my heirloom CI skillets).  

    EddieK, don't see why not, but you should have an air layer between the stone and the pan to prevent the bottom from burning.. 
    This set up is place setter feet down.  The almost round ring was made for the mini from the same material used to hang garage door openers, it is about 9.5 inches in diameter, and on top of that is the 10 inch grate from the mini.  

    Y'all cornbread is one of the easiest and most forgiving breads to do on the egg.  Just remember the CI skillet and drippings have to be hot when the wet batter is poured in so a crust is immediately formed, which prevents sticking.

    Looks very good, Joan.  You need a cornbread pan shaped like Texas.  Then, it'd be perfect !!!!!

    Recipe from memory
    The batter
    3/4 C AP flour
    1C stone ground cornmeal
    2Tsb sugar
    1/2tsp salt
    1/2 tsp baking powder
    1/4 tsp baking soda
    2eggs
    1C milk

    2 jalapeños seeded and diced
    1/2 C frozen corn defrosted
    1/4 bacon dripping &/or clarified butter
    Get the drippings and the CI hot when egg reads 450 add corn and jalapeños saluted for a few minutes then add the batter cook at 425 -450 for 20-25 minutes
