Peppers and smoked salmon for lunch

Cubanelle peppers from the garden, stuffed with cheese and pepperoni, and wrapped in bacon. Salmon with dry rub (small piece) and marinaded in Dichicko's garlic peri-peri (large piece) then smoked.

Sounds good. At what temp did you pull your salmon? Maverick shows 113, looks like its on the grate?

Not sure which pic you're looking at, but I smoke at about 180. Any lower and the fire goes out.

Pulled at 160. Rested and then refrigerated until cool.
