Jalapenos'
<?xml:namespace prefix = o ns = "urn:schemas-microsoft-com:office:office" />jalapenos' on my BGE. But I can't, now I have to wait for 2 weeks until they are ready. OMG they are so good.

Pickled onions are the best! The one in center front, in front of the pickled cabbage, has jalapenos in them. Those are hot onions!

I slice my jalops up and put them in a jar with filled with vinegar a little sugar and salt. I never buy jarred jalops anymore. I learned to do these from a US Navy bud's mother in 1977. She came to Charleston from New Mexico and showed us buds the fine art of pickled jalapenos.. She was great and I have never forgot the lessons.Located in Western North Carolina

Not to mention the lack of the tilde over the n. I had no idea what "jalapenos" were until my wife suggested that he may have been talking about "jalapeños". Then, it all made sense.

Pickled Jalapeno Peppers
Boil water in a heavy pot just enough to cover peppers with a Tbls salt
Ice water bath enough to cover peppers to stop cooking
1-2 quart pickle jar with seal
2 C boiling water
4 C white vinegar
2 tbls sea salt
2 tsp sugar
1/2 to 1 lb fresh Jalapeno peppers with slit cut in top
4 heads garlic course chop, bust apart the cloves
1 yellow onion halved and sliced thin into half moons or 1/8ths
4 large carrots sliced 1/4 inch rounds.
Wash pickle jar thoroughly rinse to be sure all soap is removed

Remove any stems from top of peppers
Boil water in pan with salt, drop peppers, return to boil then remove from heat for 3 mins.
Drain peppers and place into ice water bath till cool about 5 mins
Drain peppers
Boil 4 cups water and add the vinegar, salt and sugar.
Add the next 6 ingredients to the jar
Add the peppers to the jar
Add boiling water vinegar salt and sugar mixture to the jar to cover pepper up to about 1 inch of the top of the jar
Cap let cool and refrigerate for 2 weeks before eating
They will last for a months in the refrigerator

looks great! but being a little lazy, i use fresh and grill them, the recipe never changes unless its ABT's
