Lamb Chops
Went to Costco tonight and the lamb chops looked pretty good. Let stand about 45min with mixture of olive oil, rosemary, oregano, garlic, salt, pepper and lemon. I put enough rosemary and oregano that this mixtue is just a little thinner than a paste. Seared at grid height then finished raised. I used a little hickory wood. Rack of lamb may be my favorite food, but chops are pretty good too. I slightly overcooked, but still delicious.

Lamb chops are tough to beat on the grill.... also grabbed some from Costco yesterday which looked fantastic and a steal at $7.99 a pound. I do a heavy coat of DP Red Eye, rest for about 20 minutes and cook to rare to med rare on the BGE when the coals look like lava...... It does not get any better.... even folks who don't like lamb will devour these.

I was actually going to quote that line in my post, probably the best line in the movie and something my Yaya would have said.
We used to roast a whole lamb on a spit for Easter when I was a kid. I miss those days.

We do a whole lamb on a spit. My cousin's dad starts at 8AM or so. I arrive at around 10AM for proper supervision, some Mayiritsa to coat the stomach and the drinking begins. I never make it to dinner, I pick more lamb off that animal before it ever gets to the table. Grilled octopus, sweet breads, cornish hens, greek sausage among many others. What a day.

I did not want to start a new lamd chop. I too grilled chops tonight. They are hard to beat grilled.
