I have read a lot about what should be your first thing to grill, and Spatchcok(whatever) chicken pops up!
So after a lot of reading , i came down to the conclusion that down here in Mexico, we just call it: Pollo Loco!!!

I started with spatchcoked chicken myself. Don't let people scare you away from the "hard" cooks. There aren't many. Even brisket is easy if you just follow some instructions.Welcome, good luck, and post pics.
