Im so freaking exited, worst thing about it is that I live just 5 minutes drive from the factory(Mexico)! My specialty is Prime Rib with a very simple rub of rosemary and thyme with a mix of mustard and horse radish to make it stick! 126 internal temp and let it rest for 15 min.
Our BBQ(Barbacoa) is much different than the US type, do you guys think i can fit a large cow head on the XL with Maguey leaves on it????

Im also very inclined to try and make US type of BBQ, since i have not tried any type of seasoning, what types of Dizzy Pig rubs do you recommend that are Standar to have?(I also love fish) I don't want to purchase the small trial set and then have to reorder the large ones. Shipping is a killer to Mexico!
