Im so freaking exited, worst thing about it is that I live just 5 minutes drive from the factory(Mexico)! My specialty is Prime Rib with a very simple rub of rosemary and thyme with a mix of mustard and horse radish to make it stick! 126 internal temp and let it rest for 15 min.
Our BBQ(Barbacoa) is much different than the US type, do you guys think i can fit a large cow head on the XL with Maguey leaves on it????

Im also very inclined to try and make US type of BBQ, since i have not tried any type of seasoning, what types of Dizzy Pig rubs do you recommend that are Standar to have?(I also love fish) I don't want to purchase the small trial set and then have to reorder the large ones. Shipping is a killer to Mexico!

    Now that is a new one.  Maybe take your cow head down to the factory and ask if you can try an XL for size.  Sure they wouldn't mind;)  Sorry couldn't resist:)  I'm thinking it will be close.

  • Indeed VI, Monterrey, Mexico. Marvel, that is a great idea, i will try to take pictures. My dad loves Cabrito heads, I think its goat, but i can surely fit 5 of those on the XL. We usually do whole piglet in small cage like grill with the charcoal on top.
