I put on a 9.5 pound shoulder last night at 7pm EST. I wanted to pull it at 4.00pm today, wrap it in foil and let it rest in the cooler for two hours, pull and eat at 6pm. I ran my grate temp at 235F I set my digi Q so every time I checked it it was dead on and my calibrated egg thermometer was reading abbot 245-250. I cooked Indirect on raises grid. It's almost 8 this morning and it's at 192F. Thought it was 2 hr a pound. It was bone should I deduct weight for bone. Oh well what should I do to serve it at 6 this evening? All help is welcome. oh and yes I can add I had time figured in in case of a problem.
