Well, the pit controller worked pretty well. Temp never fell below 250. Gonna have to play with it some more to explore the features like the alarms that I did not use this time. Can't wait to do an overnight brisket or pork butt.

I have the Auber Inst. as well. It does a top notch job at a fraction of the price. I've started doing all my shoulders overnight at 220. The lower temps for a longer cook have made a world of difference in my bbq. I use a bit more lump, but feel it's worth it.

Jerry, how do you set your DFMT vents? All the way closed? Cracked a hair? Would love to get more input as there doesn't seem to be much out there.
