Odd Cold Weather Problem

Got my fire started this morning, all new lump, and went into the house for ten minutes.  Came out and it hadn't lit again.  Looked down thru the chimney, ouch, it was lit!  But, I couldn't see any smoke!  Turned out I can see the smoke in the cold air from the paraffin starter cube, but once its just lump, new lump, I can't see the smoke!  
You guys taught me to let the nasties burn off before adding my food, but has anyone run into this when its cold outside?  How can you tell you're getting "clean" smoke?  (I hope I don't have to use the "sniff your hand" technique...)
