How do you cook beef country style ribs what temperature do you cook an what temp do you pull it of thanks for you're help.

Hey there, I did some beef ribs a while ago and posted the results here

Basically threw some dry rub on and cooked at 250, slathered BBQ sauce on them when the temp wasreaching 170 and pulled shortly thereafter. I waited for the temp to reach around 170 and then went by the feel of the thermapen probe to know when to pull.
Good luck, they are deliciouse. Make sure to trim the back membrane and trim some hard fat / silver skin from the front as well.

I treated them like a rack of spares. 3 hrs indirect at 250. 2 hr wrapped in foil then another hour unwrapped o reset bark. Came out tender as a mother's love!ScooterMid TN. Hangin' in the 'Boro. MIM Judge

Here is a link to another discussion with some good info...it appears that many use some form of the the "bend test" to determine when done rather than temperature.
