Buying Meat

I just got my 1st BGE and am now an aspiring Egghead! I've done a few slow cooks on a Weber Kettle, but nothing too fancy. I'm looking for some starter advice on buying cuts of meat. What is the best and most cost effective way to buy it considering the following factors:
Storage - I have a fridge in the garage that is average size and typically holds beer and bottled water. It has a small freezer
Location - I am in Dallas (near White Rock Lake) so any help specific to this area would be appreciated
Time - I don't have tons of time to put into dissecting an animal, but am willing to do some butchering

There is a place in North Dallas - Matadors ( http://matadormeat.com/ ). Not necessarily cheep - but they do sell Prime briskets ( if you felt the need ).
Cookin in Texas -
I always find that if you find a great butcher they take care of the best customers. My butcher is always introducing me to really cool new meats and points out when best to buy his prime steaks verse choice. Great to talk to and recommendations are fabulous. I do pay a bit more for this (most of the time anyway), but all in all well worth it. Example, I have been buying briskets from Costco for the last year (only flat cut available). typically come in at a price of over $5 per pound. Last time I was at my butcher he gave me a full packer and only 3.5 per. Really enjoyed this more and far superior to Costco. He also gets weekly specials from his dealers for meats and let's me know about them. These often come in cheaper and much higher quality than store bought. So if you have one, use him/her.
