I am going to try a Italian Stuffed Pork Loin roast tonight...anyone have any good ideas/recipes for one? The recipe that I am using is calling for sun-dried tomatoes, pine nuts, garlic, parmesan and ricotta cheese, italian seasonings for the stuffing. From the sound of that - I don't think it could turn out too bad.
