I have a 20lb standing rib roast that im going to cut into two 10lb pieces to have 2 separate rubs on. Im going to go the 225-250 degree route and sear at the end. My question is approximately how long of a cook time will it take to get them to 118 before the sear? Unlike pulled pork or brisket i cant really throw this in a cooler for hours and i do not want to keep my guests waiting for it to finish or eating overcooked roast. Any help would be appreciated
