Mellow Mushroom pizza dough recipe HELP.

I'm trying to make a pizza dough as close as possible to Mellow Mushroom's. I did a search and found Fidel's recipe and comments on people that were going to try it and also people might try adding semolina flour to it. As far as I can tell no one has posted any results (or I couldn't find them) since early in 2009. Does anyone have any success stories, updates or more lessons learned that I can use to start my quest?

As always, I very much appreciate all the advice and help from this forum.

I've been trying to find that recipe for a while. I have tried some but never with good results. Hope others chime in

I tried Fidel's Mellow Mushroom Pizza dough recipe last night. I didn't use high gluten flour. I used a 00 pizza flour. I am going to try it again with King Author Sir Lancelot flour. I am going to try and add some semolina flour in the mix as well. I'm going to try to add more yeast as well.

It was close, but not chewy enough. Also the color was off. Mellow Mushroom has a darker color. I am determined to get this recipe down.
