Ten-hut! Roll Call!

My first tri-tip. Never cooked one before so wish me luck......I hope we don't end up with take out.

Have some beef short ribs braising in the oven after searing on the egg. Tonight I will put on a 7 lb. pork shoulder to pull on Sunday. Going to see what the BGE can do without me fussing over it (foiling and such) I may still inject, still thinking about it!

Here is a pic of the chicken sandwich I made last night.  I sliced each breast into two thinner pieces, then pounded them flat.  Put on a little oil and seasoning then Panko bread crumbs.  Threw on a cast iron skillet and seared them.  Meanwhile I smoked bacon at 250 for 45 min or so, then threw the chicken on with the bacon and some sliced onion to finish cooking the chicken.  It wasn't the most healthy meal ever, but it was delicious.  The chicken was the "bread"
