Trying my first slow & low today. Rack of pork ribs - olive oil, sea salt, cracked pepper, Spade L Ranch rib rub. Plate setter upside down, direct on egg rack (I don't have a rib rack), 250 dome temp, on for almost 3 hours now. Going to pull them off at 3, wrap in foil, and put them back for another hour. Unwrap for another hour, and mop with Stubb's Moppin' Sauce toward the end. I'm thinkin' tasty...

It's up, it's good! The ribs turned out great, though the Moppin' Sauce leaned a little heavy on the vinegar, but other than that, it was a huge success.Egg Head in Klamath Falls, Oregon
