I got a nice hunk of beef to treat my Mom visiting from out of town. I picked up a 2+" Prime Ribeye.
I did it Trex method. Just a little vegetable oil and salt/pepper.
Then seared at around 900 for 3 min a side on my cast iron grate on the spider with some Jack Daniels wood chips.
Took it off and let it rest, while putting on a foil pack with asparagus and bringing the temp down to 400 with a raised rack.
Put it back on for about 15 min and pulled wen it hit 125 and let it rest for 10 min and then sliced. A nice mid-rare.
Served with the asparagus and some home made potato/mushroom perogies my Mom made and a nice Cab.

Thanks for looking.
