Thai Chicken

I decided to do a Thai version of the de-boned chicken. The chicken was marinated in peanut sauce made from peanut butter, chicken stock, soy sauce, fish sauce, sesame oil, basil, cilantro, cayenne, and green onion. I stuffed the chicken with Pad Thia that I made with rice noodles, shrimp, and the same peanut sauce. Cooked indirect, raised at 400 deg to 160. Flavor was fantastic. Here are the results:

With a little practice it is not really that hard. It is becoming my favorite chicken technique. I really recommend trying it yourself.

The noodles were good. I left them a little undercooked before the stuffing. I was very happy with the results.neat idea. how was the texture of the rice noodles?

Thanks, Unfortunately there is no exact recipe. I've been making Pad Thai for some time and it's just a little of this and a little of that. I wasn't sure if it would pair well with the stuffed chicken, but it did well.
