I have a 3 lb pork loin roast in some brine as we speak. I plan to cook it at 300 dome direct until the polder reaches 140-145F. Anybody have an estimate for the time this will take? I want to do a cheese souffle with the pork and the souffle won't wait for anything.

JimW,[p]Boneless? If so I'd say an hour and 15 minutes, roughly.[p]I've let a cooked loin rest on a warming tray for over an hour, with no ill effect. [p]Cathy

<p />JimW, I have only done one pork loin - it was about 2.75 lbs. I cooked it indirect at 350 degrees looking for an internal temp of 160 - it took almost 2 hours - I'm sure that it would take less time if cooked direct.
