Hooked Egg Rookie - Tried a lot so far, looking for new suggestions

Eggers, I got an egg a little over a month ago and I am absolutely hooked. I've done a lot so far ranging from appetizers to main courses to desserts but I was hoping for some solid suggestions to tackle next.

I've included some photos of my cooks and most of these were done for the first time. I am a regular cook but had no experience smoking or using ceramic grills. I've realized if you use techniques from other eggers there is almost no way to screw stuff up. This thing just churns out great food easily. I've been to the BGE headquarter in Tucker, GA to replace a broked plate setter. They swapped it for a new one no questions asked. Talk about service! I have hooked/convinced all my friends as well and they will all be getting Eggs in the near future.

The pictures are:
-35lbs pounds of pulled pork that was devoured at the UGA vs. Boise St. tailgate we hosted at the Ga. Dome (3rd time I'd ever smoked a butt and I have people ranging in age and barbecue experience from a 21 year old that didn't like pork to 65 barbecue veteran coming up to me saying it was the best pork they'd ever had. Of course I accepted the compliments, but told them it was the Egg that gets credit for do the work. Smoking for 24 hours at 220 degrees)
-2 smoked beer can chickens (the most moist and tender chicken I've ever had)
-Bacon wrapped, Jalapeno stuffed Shrimp (a crowd pleaser)
-Smoked buffalo chicken wings (did these for a party and people that wouldn't eat meat off a bone told me they were now hooked)
-Seared bananas glazed in butter and sprinkled with brown sugar and cinnamon (didn't get a full pic as they were devoured too fast)

I've loved every second of using the egg and can't wait to try some new stuff.

    I'm assuming you have a Stoker and I am hoping to get one for Christmas this year. I have read up on it and it seems like it has everything I am looking for in a controller. Have you experienced any negatives using it?

    I have a Stoker, and I love it.  I understand it now has WiFi capabilities.  I had to set up a wireless bridge to transmit to my computer.  Be sure to get the Stokerlog program.  Google it, it's free.

  • I saw that it has WiFi now. From my understanding you basically can have the Stoker set up on the Egg (no computer tethering with a cord needed) and transmit that signal or pick it up anywhere in the world right? It looks like the Stoker has it's own IP address and that is what you use. If so, that is pretty sweet. It would be nice to set the Egg and forget it when smoking. You can carry on your day to day activities or actually get some sleep without worrying about it.

    It would be nice to set the Egg and forget it when smoking. You can carry on your day to day activities or actually get some sleep without worrying about it.
    Jmb.  Here is a graph I did using Stokerlog on a 21 hour brisket (on Superbowl Sunday).  Around noon on Sunday, I got concerned that it might not be ready, so I kicked up the temperature from my computer from 225 to 250.  I slept all night and never raised the dome.

    Note: the red line is the BGE temp and the black line is the meat temp.  I used two meat probes - one for the point, and one for the flat.

  • Mark, I stole that recipe from a buddy in college. It's pretty simple. Here's a quick recap of what I do:

    Ingredients:
    -thick cut bacon cut into halves
    -pickled jalapeno slices (or fresh if you like it extra hot)
    -large shrimp
    -(optional small pineapple slices)
    -mini skewers

    Steps:
    -each stuffed shrimp consists of: 1 large shrimp, 1 jalapeno slice, 1 half slice of bacon (can also add a pineapple slice)
    -put the jalapeno and/or pineapple in the curl of the shrimp. wrap tightly with bacon strip and skewer with 1 or 2 skewers so it is tightly held together
    -fire up the egg and grill around 350 over indirect heat with the dome closed until they are to your likely. flip every 8-10 minutes.

    I like the bacon crispy so they take around 25-30 minutes. This takes a little more prep time than other appetizers but are well worth the wait. The combination of savory/salty, smoky, spicy, and sweet makes my mouth water just thinking about it.

    Try the Banana halves coated in butter, brown sugar, and cinnamon too with vanilla ice cream. My fiance wanted to lick the plate after! Let me know if you have any more questions.

    Love the Stoker Log. Unfortunately the application doesn't run on a Mac. I just don't take the time to run Win 7 via Parallels. Good stuff.

  • 4Runner.  I have a Mac and I run Stokerlog just fine.  I do have VMWare Fusion, and run Windows XP.  I only have Windows for the Stokerlog, Quicken (Windows version MUCH better than the Mac version), and my weather station software.

    Sorry guys. I wasn't clear in my post. What I meant is, I do run Stoker Log on my Mac via Parallels and Win 7. I'm just too lazy to fire it up these days is all. :-B
