These are from The Hen Basket on FB...and I recommend mint oreos and 1 tbls of vanilla....

    Oreos & Cream Cheesecake Cupcakes

20 Oreo cookies, 30 whole and 12 coarsely chopped
1 pounds (2 packs) cream cheese, room temperature
    1/2 cup sugar
    1/2 teaspoon vanilla extract
2 eggs, room temperature, lightly beaten
    1/2 cup sour cream
    1/8 teaspoon salt

Preheat oven to 275 degrees and line a muffin tin with paper liners. Place 1 cookie in the bottom of each cup and set aside.

In the bowl of an electric mixer fitted with the paddle attachment, beat the cream cheese on medium-high until smooth. Add sugar and mix until combined. Add in vanilla.

Slowly pour in the eggs, mixing to incorporate and scraping down the sides of the bowl as needed. Beat in sour cream and salt. Fold in chopped cookies by hand.

Evenly divide batter among the muffin cups, filling each cup almost to the top. Bake, rotating pan halfway through, until filling is set, about 22 minutes. Transfer to wire racks to cool completely, then refrigerate at least 4 hours or overnight. Remove from tins just before serving.

Store cupcakes in a sealed container in the fridge.

To heck with the grate, we were talking about the clothes...

We now have our daughter and S-I-L and 2 grand kids up in Seattle. Sure is sad to see them leave. Those kids pare precious. I walk around on crutches and my shoulders are hunched when I walk. The 2 year old boy followed me and walks like Sasquatch. Finally figured out he was copying me. I make him and his brother some crutches out of 1 X 1's and they were in heaven.

I said this the first time you posted the baby's picture: She's the spitting image of YOU! At first I thought your face was Photoshopped in!
