Simple Kielbasa

Decided to take it easy tonight, so I put on some of my homemade Kielbasa. I was to lazy to make a side, so I stuck them on some bread.

Put them on a raised grid at 280 till they reached 160.

Threw on some Pepper Jack,Banana Peppers,and Homemade Horseradish

    This is it
    4 teaspoon coarse (kosher) salt
    1 3/4 teaspoon ground black pepper
    3 tablespoon sweet Hungarian paprika
    1 teaspoon dried marjoram, crumbled
    1/2 teaspoon dried savory, crumbled
    2 teaspoon finely minced garlic
    10 oz trimmed beef shin, cut into /2" dice and chilled
    16 oz fresh pork fat, cut into 1/2" dice and chilled
    1/3 c ice water
    1 1/4 lb. lean, trimmed pork, cut into 1" dice and chilled





    I used beef chuck instead of shin.

    I just freeze it raw, and put it on the egg at 250 with a chunk of hickory, probably not the correct way but its still awesome.
