That looks awesome. Did you check internal temp. of the meat before you took it off? What did you cook it to? What did you use for a rub if any. I would like to do a venison roast soon.

We cut the ham steak into a "rollable" sheet and loaded it with garlic, cream cheese, pine nuts and bacon strips. Then, we rolled it, put bacon on top, tied it up and cooked for 2 1/4 hours at 300 degrees to 160 degrees internal. After a little rest, we cut her up; and man,it was delicious!

You can never go wrong with the venison bacon combination! Sounds delicious.
