The main difference between an outdoor oven and an indoor oven is that most grills do not have thermostat control, they are not well insulated, and their cooking temps are influenced by sun, wind, rain, and at my house, snow.

    He is dead on about what he said though, we are very, very spoiled to have one of the best grils/smokers available. Believe it or not, that guy and his website are a great asset to any egger. He does in fact cook on a ceramic grill, known as a komodo komado, which runs around $4000 for the model he has.
