argentinian tri tip - mediterranean style

cooked a Argentinian Beef Tri Tip today:
Bought this EVOO in my holidays. Bought it direct at the mill:
Seasoned with EVOO, Salt, rosemary and garlic
lower temp, until 135 F was reached:

Great looking piece of meat. Just the way I like it with a nice piece of fat with just the right char. Not that I would eat the fat.
