Expecting our good friends the Lira's....Fired the Large at 4:30 AM put the brisket on at 6:00 AM ready at 2:00 PM , 250* Dome 200* Internal....Carnivore all over it.....smoked with hickory chips... :woohoo:
Foiled & reserved for 2 hrs.............meanwhile fired The Mini & cedar planked a shaved Brie with, strawberry chipotle sauce, almonds, blueberries, amaranth and tarragon...my God, it was Deeeeliciousssss............
Barbarita kept an eye on the mini all the time...............
Ready for slicing....but before...a nice Chilean Cabernet 2005 D.O. Maipo Valley....it was superb............
Sliced across the grain.......juicy & tender.............
The mango cake was gooood...............
A great day, with great friends.............

Dave cooking a nice brisket is devoting at least half a day of your precious time to it , not sleeping well most of the time and playing the temps right so that in the end someone else can say....... Oh it's nice....... :woohoo:

It all looks good. Your brisket has beautiful color on the outside. How did the brisket come out ? My concern is overcooking it. The cake looks good too. Sometimes starting with dessert sounds good.

Gary, I always use a drip pan with wine and/or water it helps keeping the brisket moist & tender, when I foil I add a bit of juice as well

Yes it is all WOW but sometimes a little more WOW...Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers. -
