Several weeks ago I tried to do the dutch oven pineapple upside down cake and messed up big time because by misreading the directions and did it direct not "indirect" :blush:. After several weeks of soaking and burning off the 10" DO. I gave it another try. To be safe I used the big white thing in the kitchen to bake it.

The results were awesome!!! Next time I will try it on the egg.
Normally I plan the menu, but this weekend my wife wanted to plan it.
Tonight she wanted chicken thighs. I have never had luck with them before, but tonight they turned out great.
went raised direct @ 250 for about 90 minutes and then sauced with a 50/50 BH original and Tennessee red.


Tomorrow night is lamb chops and Monday there are no options.... Car Wash Mike's ribs.

    Chicken thighs are my absolute favorite meat of all (from a chicken, that is).

    I like it more than wings, breasts, legs... so long as it's prepared properly ;)

    Which it looks like you did. Your pics make a man hungry. Nicely done :D

    I found the cake recipe somewhere on here. It wasn't in the cookbook. It was so easy and tasted so good.
    Here's the recipe
    Cast Iron Skillet Pineapple Upside Down Cake


    1/2 cup butter
    1 1/2 cup brown sugar
    1/2 cup pecans, chopped
    1 fresh pineapple, peeled, cored,eyes removed, and sliced (reserve juice)
    1 pkg butter recipe cake mix (I used butter pecan)
    Use juice as part of the water required for the cake mix
    3 whole eggs


    Melt 1/2 c. butter in 10-inch cast iron skillet (a deep one is best). Add brown sugar and stir until sugar is dissolved. Add chopped pecans to mixture just before taking off fire.

    Set skillet off heat and then add prepared pineapple. Slice pineapple into rings. (I chop a couple rings into pieces for added pineapple between the slices in bottom of skillet.) Arrange pineapple on top of brown sugar mixture. Maraschino cherries may be placed around at this time.

    Prepare cake mix as directed on box. If there is juice from pineapple, that can be used instead of the water to make the 2/3 c. of liquid. Add remaining butter, eggs, and liquid to cake mix stir until thoroughly beaten. Pour on top of pineapple mixture.

    Place in green egg indirect at 350 degrees. No lid on skillet. Check every 20 minutes and rotate to ensure even cooking.
    Bake time is about 1 hour but check with wooden toothpick for doneness. Let cake cool for at least 10 minutes. Run knife around cake to loosen from sides of skillet. Invert onto serving plate

    It was one of the best I have eaten. Was this your recipe? I printed it off several weeks ago, but forgot who the author was.
