Quick Monday Night Cook

started with a roasted red
threw on some marinated portabellas
toasted the ciabatta and melted some gouda
put it together with some pesto mayo and baby spinach

We think they are great! I am a BIG meat eater and it is heavy enough to substitute for a burger (not always but sometimes).
