stephen, you got me thinking... raise the grid with pop cans to increase distance from fire? place butt in oven pan? place fire bricks under pan? place lava bricks from old gas bbq under pan? use double pans with clean sand between them? disclaimer: try them at your own risk :P

Put a V rack in a roasting pan.
Place the butt on the V rack.
Set pan on grid.
Smoke to your heart's content
btw, you can get 2 butts on the large V rack with no problemo
