Recs for a solo weekend?

Gonna be a weekend bachelor again this weekend as the wife is driving to pick up the kids from camp, and then stay with my mom until Sunday...(payback I guess for hunting season when me, the boy and the dog disappear)

Been in a bit of a rut with cooks lately, pulled pork, ribs, blackened fish, spatched chix and turkey burgers...so I'm looking for suggestions for one person meals.

or you could just smoke a brisket...a long cook with nobody to bother you? that's a real vacation.

you could try the bob gibson's white sauce on a couple chicky breasts or similar......quick cook, sauce better if made a day ahead, might play with the vinegar and heat flavor to your liking.....

can google the sauce recipe. I rub down the chicky breasts with a rub and half way through the cook start brushing on the sauce. rub with some heat works best with the vinegar based sauce. t

2 Cups Mayonnaise
1 Cup Distilled White Vinegar
1/2 Cup Apple Juice
2 Teaspoons Prepared Horseradish
2 Teaspoons Ground Black Pepper
2 Teaspoons Fresh Lemon Juice
1 Teaspoon Salt
1/2 Teaspoon Cayenne Pepper

Preparation
In a large bowl, combine all ingredients and blend well. Use as a marniade, baste, or dipping sauce. Store refrigerated in an airtight container for up to 2 weeks.

Thanks for all the suggestions! All good ideas.

Just got back from the grocery....with a 1.7 lb dry aged T-bone, a brisket (which I have yet to make a good one) for the homecoming, and HAVE to try those Bob Gibson's chicken breast from Tom!

If Fishless will post what in the heck that breakfast is, I am ALL OVER IT! :woohoo: :woohoo:

Do something that you love but she doesn't. I am going to be in this same situation in a few weeks but for a whole week. We are traveling to her grandparents and staying for a week but she is staying for a bit over 2 weeks. (lucky school teachers

) During this time I will be messing with pizzas and fish most likely. She rarely desires pizza and hates fish.
