1st beef rib roast

I've always been nervous about cooking a beef rib roast. Especially this no grains grass fed beef we bought. I cooked it as a prime rib: 350* dome, platesetter legs up, grid, glass casserole no cover, ribs fat side down coated with dizzy pig seasoning in casserole dish, with apple wood added through vent for first hour for smoke. Took it 2.5 hours to reach 118* and then foiled it in cooler for 1.5 hours. Temp actually rose to 138 in the first hour. Excellent medium rare.
