I try to use chunks if at all possible. A lot of chips seem to block air flow through lump bed and it takes longer for the egg to recover.
When you are done cooking the chunks can be lifted out of the lump bed for the next cook, little or no flavor smoke in the next cook.
At times when I have to use chips I will make a couple of large foil pouches and poke holes in the top to allow the smoke to release when the pouches are heated.

I like chunks, easier and 3-4 pieces, 2" pieces, usually are enough, how many chips is that? I agree with GG that if you use chips put in foil packet and poke holes in, except for some reason I like to sprinkle in some Jack Daniel's chips with fruitwood chunks on butts and briskets for a slightly spiced up sweet smoki-ness, I really like that,provided the meat is a bit stronger/bolder cut.Be WellKnoxville TN
