The only thing better than cooking "local" is cooking "local" on an egg! I have a hormone and antibiotic free, organic, grass fed beef farm 5 minutes from my house! Nothing tastes better...If only I could find a similar pig farm! Nice cookin'!

What's your method of choice for ribs? I'm always tinkering with mine, a mix of CWM and trial/error. Currently use Butt Rub but haven't settled on a sauce yet. Found that 250-deg for 3-ish hours is easily do-able, tented for a bit after that too.
Will be making a trip out to Snoqualmie next month. Never been out that way. -
I am at the same place as you..CWM and need to find a rub. I think I need to order some of that dizzy rub. ?Also thinking I need to extend the cook a bit longer as well. I ordered the Dizzy Pig sampler pack to experiment. Pretty good overall. Even made use of the Pineapple Head on sweet potatoes. I'll probably order more once I've finished off my existing stock.
Some might disagree but last weekend I went 250-deg for a total of 6 hours cooking 3 full racks of babybacks! Low and slow. First 3 hours in a stand-up rib rack, next 2 hours in foil with a little apple juice, then 1 more hour sauced up still in foil. A little dry but not overly dry. Got rave reviews from the party. As for the bend test --- it's a sign when I can't pick up the rack because the bones would come right out! I know, many say that's "overdone" but hey, that's how I (and the Mrs.) like 'em. -
