I cooked sone last weekend at 250 for 7 hrs and they simply would not pull up the bone as yours did. Were way over done when I finally pulled them. Just another example of cook to doneness, not to a pre-conceived picture of done. Yours look great.

I freakin' love that book! Dropped it on my toe in the bookstore when I took it off the shelf :blink: . I didn't even hold a grudge. Those ribs look amazing!
