Twice Caramelized Pork Tacos al Pastor.

First off let me say thanks to Beli for the marinade recipe. I took his recipe as a base and changed it up a bit to suit my tastes. Came out great and was a big hit with all my friends. Trying to keep a normal routine with a new baby is hard, but I always do a memorial day cook so I wanted to have everyone over. Decided on some pork tacos al pastor, brined chicken legs and brats.
On to the prep and cook.
Prepping the chilis with the weed burner. I roasted 3 poblano and 3 anaheim chilis to get some nice char flavor for the marinade.
Here is my subject, 8 1/2 pound pork tenderloin. I need to find a good butcher because it took a while to break her down into 1 inch cubes and to trim the fat of the meat.
Getting ready to make the marinade. Here are the ingredients: 2 white onions, 3 poblano's, 3 anaheim chilis, 9 garlic cloves, 4 smoked chipotle peppers, 2 tbs sppons adobo sauce all crushed in the food processor. Add 1 1/2 cups OJ, 3/4 cup distilled white vinegar, 6 teaspoons kosher salt, 3 tsp mexican oregano, 3 tsp cumin.
Everyone in the pool. Marinade and cubed pork in one of my brining tubs. Did this the day before to let the marinade really do its job.
Also brined 24 chicken legs overnite in a salt, brown sugar, cumin, lime brine.
Made some pico de gallo, some honey cayenne sour cream, and got some flour tortillas.
Did the chicken legs at 350 for about 45 minutes, turning them halfway. Took to 180 internal temp.
Did the pork on the grate and then transfered it to the cast iron skillet for a double caramelized crust. Did some brats as well for the kids.
A little cheese, some honey sour cream, pico de gallo and the al pastor pork. Tasted great.
All partied out.

That's alot of work with a new baby in the house! It looks like a crowd pleaser. I hope you are going to frame that last picture, it's a great one.Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

Thanks Mickey. The boy is a lot of work, but its all worth it. Soon he'll be getting a mini Egg so I can teach him all about flavor.

I get all my BBQ meat from BJ's wholesale club. They have boston butts, briskets, and nice big pork tenderloins (It was definitely a tenderloin). They also sell 3 rack packs of baby back ribs. Its a great place to get what you need. Thye generally have big cuts because a lot of restaurants buy their meat from there. It opened up by my house about a year ago and its the first place I look cause their prices are amazing. The tenderloin cost me $18 and some change. You can't beat that price per pound for a 8 1/2 pound loin.
If you don't have a BJs near you try your local Costco.

Trust me when I say that the marinade is probably the best one I've ever tasted on pork. Pork tends to not take to marinade so well in my opinion, but the OJ and the chilis in it really hit a home run.
Keep in mind though that it is a spicy marinade. I would remove the seeds from the roasted chilis before putting them in the food processor. That's what I did and they heat was just perfect when the pork was cooked. Probably would have been too much if I would have left the seeds in the chilis. -

I don't mean to belabor this, but I have bought whole BEEF tenderloins from Sam's and from the local grocery and they have been about 6-7 pounds. I've never seen a pig that is as big as a cow. :-)
I searched the BJ's website and the only tenderloins they advertise there are 14 oz. The only pork tenderloins I've bought from Sam's were two to a pack and about 1 pound each. That must have been a pork loin. You don't have the label, do you? If you do, I'd go consult the meat manager at BJ's if it says tenderloin.The Naked Whiz -
I'm with The Whiz. I'm almost certain it was a loin and misread or mislabeled. Recipe still looks good, no matter which piece of pork. On my To Do list! :woohoo:

It said tenderloin on the pack, they had a whole case full of them. It was more like a boneless side of a whole pig than a nicely small loin. In any event it tasted great, so I'm not complaining.
Go check out your local Costco or BJs meat sections and let me know what you find there. -

Righto! There's a BJ's on the way home. I'm not a member but I craftily snuck in (saves a trip to the customer service desk, lol!)
They had 8-10 pound long round pieces of pork that look just like yours correctly labeled as Boneless Center Cut Pork Loin and it was $2.29 per pound. I hope that what you bought wasn't mislabled as pork tenderloin and priced accordingly.The Naked Whiz -
