Need high temp port butt cook
Tailgate
Posts: 56
Have a 8 pounder in the frig and I don't have 12+ hours tomorrow to cook it. What is a higher temp that I can cook it quicker using indirect? Can I get in the 300 -325 range or am I asking for trouble?
Or, should I attempt my first overnighter? TIA..everyone's always so very helpful.. Bob

I have cooked them at 300-350 with great success. Sometimes I think it might even taste better that way. Cook until internal temp is 195-200.

You can go 300-325* tomorrow until the butt hits 170*. Then you can double wrap it in foil and back on the egg until 200*. Let it rest for an hour or two and then pull it apart and serve. You'll probably be done in 7 hours. Also be sure to take it out of the fridge while getting the egg hot so the butt comes closer to room temp.
