I am looking to throw on a tri tip tonight for dinner.
I have seen several different recipes to cook this cut. Anyone have any suggestions that they have tried and had success with?
some say sear fat side down and then flip and cook fat side up indirectly for 20-30 minutes at 350 untill med-rare (demanded that med rare due to tenderness issues)
others say slow cook at 300 indirectly untill med rare.
Anyone?

I do mine fat down low on the spider at 350 for 15 min.. Smoky and ugly but leave it alone, then flip it for 5 minutes. Then I go indirect on regular grid until medium fat side up. It is now my wife's favorite meat and may be mine also.

I'll give that a shot.
Excuse my stupidity. What did you mean by spider? I have been away from the game for awhile. -

I know if you over cook the Tri-Tip it will be like leather. I would cook it indirectly at a low heat 250 or so, make sure you place a good rub or baste it with your favorite sauce. I would also use the Red Oak boards, this will ensure the safety of your meat from drying out. The Tri-Tip is a lean meat and one of the best cuts if you can FIND IT! Big in California, missing here in Tennessee! Best of luck!Raideregg

I tried the recipe/method that Morro Bay Rich posted above in a cook a week or so ago.
I will follow it again without deviation. It is just simply wonderful and seems foolproof. Good luck.
