It doesn’t get much hotter than the EGG cookin’ in July! Make sure to keep yourself hydrated with a bit of whatever you’re using for the Beer Can Chicken. Ice Cream Sandwiches are also a great way to stay cool. Looking for some great ideas for a summer cook out? Try out a Pimento Cheeseburger or Dr. BBQ’s Spare Rib Surprise. Just don’t be surprised if your neighbors stop by for a quick bite when they smell what you’re cooking!

My first attemp at carwash mike's ribs was ok they tasted good but were a little tough need to cook longer. Pretty good for the first time.

Great pics! They sure do look tasty, even if they weren't as done as you'd like.

If you were hoping for fall-off-the bone ribs, you have to foil them. Mike's method doesn't do that, but you'll know it's done when about 1/2" of end bones show through, and the rack falls over in half when you pick it up with tongs.

    Keep trying!

Look for a little more draw on the bones,

    and try the bend test

For spares, I plan on a 7 hour cook at 250, but I don't cook to time, I do the bend test. I'm lighting my egg 8 hours before dinner time for spares.
