Ok, not cooked on the egg, but thought the method would nonetheless be of some interest. What I really wanted was Jay’s lemon tilapia, but I had no lemons or tilapia so that plan was seriously compromised. The fruit & fish combination I had, salmon & apples. I’ve never cooked on a plank, but this seems to be a reasonable & disposable alternative particularly with a fist full of alder chips tossed on the coals. The apple didn’t impart as much flavor as the citrus would have, but it was still good:
