Did the "Puerco Adobo" recipe from the Cookbook - was wonderfully juicy. I cooked it indirect with some fig wood at 325 until about 130-ish, and then finished it direct to 145. Pulled and gave a foil rest:

Welcome to the cult.Looks great, I grill my corn then put a mixture of light mayo and Dizzy Pig Tsunami Spin mixed together for the last five minutes or so, comes out great. You may never use your oven again!

It was awesome!
I read to do a few cooks lower than 400 to set the gasket, so I figured this would be a good experiment.
Getting the temps to stabilize really wasn't that hard, as long as I remained diligent in keeping track. Still learning the nuances of it, but I can already tell that I'm in love!! :woohoo: -
