On Saturday, a bunch of meat but it's some of her favorites...
For mid morning some brats, spicy mustard, onion and mushrooms.
For dinner a rack of ribs, sides with a smoked stuffed pepper.

Folks go nuts over the fixn's and most anything goes. (think cheese balls). Crab mix and or shrimp mix works really well. Keep in mind these will be cooked to get the peppers done.
I try to keep it simple.
Large Poblano peppers, cleaned. I cut across the stem area and a long slide down the center.
I like monterey jack or cheddar, or pepper jack cheese and or a mixture. Sometimes I will add a little creme cheese. I really like the pepper jack mixes.
On these I had some left over smoked chicken which I cut up small and mixed in.
Then cook. 30 to 45 minutes at about 350°. I learned early on to line the aluminum foil with parchment paper. Otherwise that great tasting cheese will work its way into all the little folds in the foil and will never come out. Parchment paper lining solves the problem.
When first working out what you like pick up some smaller peppers and try the different cheeses. Just cook the cheese in the peppers to see what you prefer than begin mixing the cheese up with outer 'stuff'. to see what you like. Worcestershire, Tabasco, chives, onions, rice, ground beef, sausage, little smokes, different seasonings.
I usually cook the simple as above and do one or two experiment peppers to find new tastes. That way I always have some great eats.
